Caribean Dinner Tablescape

This week's tablescape was definitely a challenge. Pat wanted to set a table to go with her latest cooking craze - Caribbean cuisine. It's a blend of many cultures including African, Indian, Chinese, and European. Common ingredients in the food are also popular vegetarian foods (beans, rice, bell peppers, chick peas, sweet potatoes) along with chicken, fish, and beef (oh dear, will I never get my family to cross over to the dark side....vegetarianism?) I had never heard of something called "Jerk Chicken" until Pat assured me it was easy to fix and very popular. The food is colorful, light, and flavorful. So, that is the direction for the table.....
